We work in the heart of Nuremberg — at the center of one of Europe’s most diverse culinary landscapes. Northern Bavaria is shaped by fruit orchards, vegetable fields cultivated for centuries, valleys, fish farming traditions, old forests, urban textures, and hillside vineyards.

It is a region where craft and culinary traditions remain alive.
In this landscape, we search for new flavors, for a contemporary understanding of our heritage – and for a kind of fine dining that meets ingredients, animals, and people with the utmost care.

We work close to nature, regionally rooted—refining through aging, fermentation, and concentration. Our menu changes regularly, sometimes weekly, always guided by our culinary concept of seven seasons.

Our work takes place in our garden, in the test kitchen, and in a growing aroma library.
