This is where the foundations of our menu are created: through fermentation, through drying, through extraction and ageing. Hundreds of aromas are captured here, concentrated, rethought.

Felix Schneider and the etz team give a one-hour introduction to the techniques and ways of thinking that shape our work. Each evening puts a different aspect in the foreground — a particular fermentation technique, a special process of refinement, a surprising metamorphosis.

How does the aroma of things transform? When is the right moment? What is nature? How does our perception of food change once we understand what truly lies on the plate?

These insights are more than a „making-of“ — they are the beginning of a journey that continues in your own mind. Many of our guests speak afterwards of a changed view of food, of taste, of the possibilities of their own region.

A menu at shared tables

After the visit to the test kitchen, the menu follows in the restaurant. On this special evening all guests sit at long, shared tables — as a sign of openness, of shared experience, and as a deliberate contrast to an ordinary restaurant visit.

At every Metamorphose evening we present, alongside the general introduction, one additional focus.

17 September — from must to vinegar
From fruit to depth: how acidity comes to be. We follow the path from young must to mature vinegar, showing different methods and how these vinegars structure, enliven and sharpen the dishes at etz.

12 November — miso
How different base substances transform into complex depth — and what we make of it.

The Metamorphosis Evening

5:30 pm — Beginning in the test kitchen

approx. 7:00 pm — Prologue and the start of the menu in the restaurant

approx. 11:00 pm — A last greeting from the kitchen

The menu

On Metamorphose evenings, too, we offer a set menu. Depending on the week and season, we present you with more than 11 dishes.

During the evening the choice is yours: our wine pairing, our exclusive wine selection, or a non-alcoholic pairing straight from our test kitchen.

The menu, a tasting in the test kitchen, water and coffee are included in the price.

Booking, Rebooking & Cancellation

You can reschedule or cancel your reservation free of charge up to 48 hours in advance; after that we charge a fee of €50.00 per person.

If an evening is fully booked, add yourself to the waiting list — should a seat open up, we'll get in touch personally, in the order of entry.

Redeem voucher

You can redeem voucher codes directly when paying for your reservation — simply enter the code at the payment step. The amount is applied, and any remaining balance stays on the code.

Arrival & Access

The entrance to the restaurant and the test kitchen is reached through the rear courtyard of the former Bavarian metalware factory (archway at Kirschgartenstraße 6, Nuremberg).

Parking is available at the Freibad West lido car park; the restaurant is within walking distance of the Bärenschanze underground station.
