The Seven Seasons Pass

A year at the table of a landscape.

Seven evenings through the culinary seasons of Franconia — from ripening in winter to the retreat of autumn.

Why seven

Four seasons are not enough for us.

If you commit to strict seasonality, four seasons are simply not enough. We measure the year by what grows and ripens outside — in seven great phases that flow into one another.

The pass connects them into one arc: seven evenings on which you experience how a landscape moves through a year — and our menu with it.

Seven chapters

A year in seven menus.

Every season has its own menu. With the pass you experience them all — and feel how a landscape moves through a year. Choose a season in the wheel.

On the plate
In the kitchen
  • Rest & Ripeningfrom January into MarchOutside, everything sleeps deeply. But on our shelves and in our cellars, the fruits of the past year rest, ripen and ferment — slowly and quietly completing the full spectrum of their aromas.
  • Blossoms & Shootsusually in AprilA tentative awakening in the fields and meadows. Lush green is still scarce, but buds, shoots and early blossoms set the first accents on our plates. With the waters of spring, life returns to the rivers and streams around us too.
  • Fresh Greena phase in MayChlorophyll is now the defining theme — and draws us into our garden. In the Knoblauchsland there is plenty of fresh green to plant and harvest. Everything — leaves, blossoms, trees — is now full of sap and vigour.
  • Young Fruitin JuneThe shadows still grow shorter and the days longer. The summer sun grows ever stronger, and with it come the first flavours of berries and stone fruit — fresh and full of acidity.
  • Rich Varietyfrom July into AugustSummer — dazzling light, lush opulence and abundance everywhere. It is harvest time. With ever more sun, sweetness now finds its way into the fruit. The green of the fields gives way, more and more, to the golden yellow of ripe grain.
  • All Coloursfrom August into SeptemberThe colourful finale of the growing year. The orchards now glow in the colours of ripe fruit — yellow, orange, red in every conceivable shade. The days shorten quickly now, meadows and fields are noticeably damper in the morning. The first mushrooms herald the coming decay.
  • Retreatfrom October into DecemberThe close of the year. From the cleared gardens and fields we now move into the forests, seeking what cool and damp bring forth. The season of mushrooms has begun. Meanwhile we prepare for winter — drying, ageing, smoking and preserving.
  • Within it: The Garden – vegetarianlate July to mid-AugustFor three weeks our garden carries an entire menu — purely vegetarian, focused on its abundance.

As a gift

Perhaps the most beautiful gift is time.

A promise to spend more time together — and to experience the seasons of etz on each of these evenings. The pass is often ordered right after a first visit. For us, that is always a little bit of a declaration of love.

Good to know

The Pass in detail.

How to book your evenings

With the pass you receive a personal pass code. Use it to book your evenings online like any other guest — the code at checkout covers your menu. Of course we are also happy to book for you by phone or email.

Metamorphose included

Your pass is also valid for our evenings in the test kitchen. We book these evenings for you personally — write to us at reservierung@etzrestaurant.de.

For two

A pass is valid for one person. If you come as a couple, each person has their own pass — or your companion simply pays for their menu in the same booking.

Naturally flexible

If a season doesn't work out, we move your visit to the next season or into the next year.

The Three Seasons Pass

A first taste: three evenings in three seasons, valid for 12 months and available in limited numbers.
